It's possible to disable mail responses for only one categories ?

In the current, and I suspect v2.0, version, no, you cannot turn off the responses for a specific category.

However, you can modify the PHP code to check what category the message is coming out of or going into and based on the permitted categories just disable the send abilities.

You would need to take a look in the inc/ folder.
